How Do I Know When My Steak Is Done?

rib eye How do I know when my steak is done? This is a common question...the ideal doneness for a steak, in my opinion, is medium rare.

How do you know when your steak is medium rare (or whatever doneness you prefer)? Well, it's difficult to know...sorry, that's the truth. But, there are things you can do to make it as close to a science as possible (and less guesswork):

1) Let steaks sit at room temperature for 15 minutes (this allows them to cook evenly)
2) The face test: A rare steak is soft like your cheek; some resistance, like your chin, is medium; firmer to the touch, like your forehead, is well done.

It's better to take your steak off the grill early vs late. Remember, your steak will continue to cook after you take it off the grill. You should always allow it to rest for 5 - 10 minutes after you remove it from the grill. Good luck!
