Servings: 4
Prep Time: 10
Cook Time: 20
Ingredients
2 Tbsp Olive Oil
3-4 Red Pepper - Roasted (Jar), Chopped
2 Chicken - Breast, boneles, skinless, cubed
1/2 Cup Cheese - Parmesan
5-7 Tomatoes - Sun Dried, Sliced into strips
3/4 Box Pasta - Penne, Cooked Al Dente
7-10 Artichoke Hearts - Canned, Chopped
1 Alfredo Sauce - Jar
1 Tbsp Adobo

Cooking Directions

1. Preheat oven to 350 degrees while you saute the ingredients.

2. In a frying pan heat the olive oil over medium heat.

3. Add the chicken and brown, approximately 4-6 minutes.

4. While the chicken is cooking, add the tomatoes, artichoke hearts, and roasted peppers into the same pan as the chicken.

5. Cook the penne(or whatever type of pasta you prefer, I typically use the mini-penne) to the desired softness. I prefer Al Dente.

6. Once the chicken is heated through, and the pasta has been drained, place all ingredients in a bowl and mix with the alfredo sauce. This dish dries out while in the oven, so I recommend using the whole jar to ensure that it still stays saucy when you remove it.

7. Place the mixture in a casserole dish, and sprinkle the parmesan cheese on top. Place in the oven for about 10 minutes. Remove and serve.
