Ingredients
2 tablespoons Olive Oil
1 tablespoon Oregano, fresh, chopped
2 carrots (1 cup) Carrots, grated
to taste Seasoning - Salt
to taste Seasoning - Black Pepper, freshly ground
1/2 pound Beef - Ground
1 small (1 cup) Onions, roughly chopped
1 stalk (3/4 cup) Celery, finely chopped
8 ounces Pasta - Penne, Atkins Low Carb
1/2 cup Heavy Cream
1 1/2 cups Tomatoes - Canned (Diced), with their juice
1/3 cup Wine - Red, dry
1/4 cup Beef Broth, reduced-sodium

Cooking Directions


In a large pot, heat oil over medium-high heat.

Add onion, carrots and celery and saut until soft, about 7 minutes.

Add beef, breaking up with a wooden spoon. Cook until browned, about 7 minutes.

Add tomatoes, wine and stock. Bring to a boil; reduce heat; simmer 1 1/2 hours, stirring occasionally, until about three-quarters of the liquid has evaporated.

Add heavy cream and cook for another 2 minutes to heat through. Stir in oregano and season to taste with salt and pepperDuring the last 20 minutes of cooking time, prepare pasta according to package directions.

Drain pasta and return to pot; cook until heated through, about 3 minutes. Serve immediately.
