Avgolemono (Egg and Lemon Sauce)

Ingredients
1 or 2 cups Chicken Broth
1 or 2 large Lemons, strained juice
2 or 3 Eggs, room temperature, whole eggs or just yolks

Cooking Directions


Beat eggs until pale and foamy (2 or 3 minutes). Beating continuously, gradually drizzle int he lemon juice. Using a ladle or large spoon, very slowly add the hot pan juices or broth to the eggs, beating all the while, until the egg mixture is warm. Pour the Avgolemono into the contents of the pot for which it is being made and heat lightly-without allowing to boil-just enough for the sauce to thicken. Remove and sauce.
