Ingredients
4 teaspoons Olive Oil
1 Chicken - Breast, Seared in a pan
1 (16 oz) Jar Salsa
6 Tablespoons Sour Cream
2 Cups Mushrooms, Sliced
4 Ounces Cheese - Cheddar, Shredded
2 Cups Rice - White, Cooked

Cooking Directions


1. In a skillet, heat oil over medium heat. Saute mushrooms.

2. Combine mushrooms, sour cream, cheese, salsa, rice, and chicken. Place in a greased casserole dish.

3. Bake at 350 degrees F (175 degrees C) for 25 to 35 minutes.

Actually, the recipe does state "Cooked" > MargieM, Dinnertime, Kate1104. My question is--does this recipe still rock if you use brown rice instead of white?

This was wonderful and fairly quick. I lightly browned my chicken breasts, and a few small tenderloins as well, sprinkled them with salt and pepper, put them at the bottom of the casserole dish, then mixed everything else up while it all was hot, poured it on top, added extra shredded cheese, and baked. I also cooked my rice before hand. I used boneless chicken breasts, and chicken tenderloins. On the larger breasts, I butterflied them then pounded them thinner, they cooked better that way.

I substituted sliced olives for the mushrooms, added 1/2 tsp. of cumin, and followed teacherlady's advice....it was a hit!

I used boneless, skinless chicken breast. Cubed it and sprinkled with salt and pepper. I browned it before adding with the other ingredients. I also cooked the rice before adding it in. Sprinkled the cheddar cheese on top. Very yummy

I second what dinnertime asked. Is the chicken cooked then shredded? If it's to serve only 4 then the rice must be pre-cook, right?

I'd like to try this recipe but have questions about the ingredients. Is the chicken breast halved, whole, cut into cubes, boneless, skinless? Is the rice added after it is cooked or is it uncooked?

I leave out the rice and add veggy's and boxed mix stuffing (prepared) and crumble on top for a nice crusty topping, the bake.

I made this because I had all ingredients on hand,I added 1/2 sm onion and one orange pepper,fryed after and in same pan as mushrms,I like this dish and my friends loved it,but my husband thought it was bland,watch out,this recipe makes a real lot.
