Bacon Macaroni and Cheese

Ingredients
1 tablespoon Butter, to grease pan
to taste Seasoning - Salt
6 slices Bacon
3 cups Water
2 Eggs
3 cloves Garlic
Cheese - Parmesan (Grated)
To Coat Bread Crumbs
1 Pound Pasta - Macaroni
1 1/2 Cups Heavy Cream
1 Cup (shredded) Cheese - Cheddar
1 (chopped) Onions - Red

Cooking Directions


1. Preheat the oven to 350 degrees F.

2. Bring a large pot of salted water to a boil. Add the macaroni and cook until al dente (you can look at the package directions for timing). Drain and set aside.

3. Heat a medium skillet over medium heat. Add the bacon and cook until really crispy, about 15 minutes. Remove with a slotted spoon, reserving the fat in the pan, and transfer to paper towels to drain. Return the pan to medium heat and add the garlic and onions. Cook until the garlic is golden and the onions are translucent.

4. Combine the cream and water in a medium saucepan and bring to a simmer. Remove from heat and stir in the cheddar cheese. Stir until melted. Beat in the egg yolks.

5. Butter an 8x8 baking dish and sprinkle with breadcrumbs. Stir the cheese sauce, bacon, onions and garlic into the cooked macaroni and combine well. Transfer to the prepared baking dish and sprinkle with the Parmesan cheese. Bake until hot and bubbly, about 15 minutes.

the family loved this recipe. I also sauteed some celery and carrot and tossed it through the cheese sauce just so the kids could get some veggies into them
