Baked Butternut Squash

Cook Time: 30 Minutes
Ingredients
1 Tablespoon Butter, melted
to taste Seasoning - Salt
to taste Seasoning - Black Pepper
1 Eggs, lightly beaten
1/2 cup Onions, finely chopped
2 Tablespoons Cheese - Parmesan (Grated)
1 Teaspoon Sugar - White
Saltine Crackers
1/2 Cup Mayonnaise
1 (peeled, seeded, cubed) Squash - Butternut

Cooking Directions


1. Place squash in a saucepan and cover with water; bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until very tender. Drain well and place in a large bowl; mash squash.

2. In another bowl, combine the mayonnaise, onion, egg, sugar, salt and pepper; add to the squash and mix well. 3. Transfer to a greased 1-qt. baking dish.

4. Combine the cracker crumbs, cheese and butter; sprinkle over top. Bake, uncovered, at 350F for 30-40 minutes or until heated through and top is golden brown.
