Baked Eggs w/ Spinach
No Reviews
Servings: 4-6
Prep Time: 15 Minutes
Cook Time: 60 Minutes
Ingredients
1 bunch Spinach
1/3 cup Onions, chopped
1/3 cup Bacon, crumbled
1/3 Cup (chopped) Mushrooms
4 Eggs
1 1/2 Cups (shredded) Cheese - Cheddar
1/4 Cup Cheese - Parmesan (Grated)
1/2 cup Cheese - Parmesan, shredded
16 oz Cottage Cheese
2 Tablespoons Olive Oil

Cooking Directions

1.Pre-heat oven to 325 degrees fahrenheit.

2.Rinse spinach and remove any yellow, wilted, or undesireable pieces. Chop off larger and longer stems. Do not dry spinach.

3. Cook spinach in medium size skillet(preferably one that can also be placed in the oven, such as cast iron) over medium-low heat for about 3-4 minutes. The moisture from rinsing will help spinach from burning. The spinach will reduce in size greatly from cooking, it will be done when its a dark green color.

4. Whip eggs in medium size mixing bowl.

5. Chop spinach, add it and all other ingredients(except the olive oil) into the bowl with the eggs and mix well.

6. Pour mixture into skillet, or other 9 inch oven safe dish and place into oven.

7. After 45 minutes, remove dish and cover liberally with grated parmesan, then drizzle lightly with extra virgin olive oil. Place back into oven for another 15 minutes.

8. When done, pie cut into 4-6 pieces and serve hot.
