Baked Potato Carrot Casserole

Ingredients
1/2 cup Butter
5-7 Carrots
2 cups Cheese - Ricotta
1 teaspoon Seasoning - Salt
on top Cheese - Parmesan
1 Cup Milk
7-10 Potatoes

Cooking Directions


1. Boil potatoes and steam carrots, peel both potatoes and carrots. Separately, mash potatoes and dice carrots.

2. Add Ricotta Cheese, 1/4 of a cup of butter, Salt, and milk to the mashed potatoes and mix.

3. Add the carrots to the potato mixture and slowly mix without crushing carrots.

4. Insert in casserole bowl and even out and sprinkle Parmesan cheese over mixture and spread the remainder of the butter (1/4 cup) by dropping little pieces of it over the Parmesan.

5. Bake at 350 degrees for 40 minutes or until top is crusty.
