Servings: 24
Prep Time: 15 Minutes
Cook Time: 40 Minutes
Ingredients
1 Cup Butter, Softened
2 Lemons, Juiced
4 Eggs
2 Cups Flour - All Purpose
4 Tablespoons Flour - All Purpose
1/2 Cup Sugar - White
1 1/2 Cups Sugar - White

Cooking Directions

1. Preheat oven to 350 degrees F (175 degrees C).

2. In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9x13 inch pan.

3. Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1 1/2 cups sugar and 4 tablespoons flour. Whisk in the eggs and lemon juice. Pour over the baked crust.

4. Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool. For a festive tray, make another pan using limes instead of lemons and adding a drop of green food coloring to give a very pale green. After both pans have cooled, cut into uniform 2 inch squares and arrange in a checker board fashion.

These came out very good, and are easy especially when you are limited on ingredients. I gave it a little twist and added a little bit of blueberry jam and it gave it a berry flavor twist... .they came out spectacular. Will make them again! Thanks!

Good stuff. I also added lemon curd and I sprinkled 1 tablespoon of powdered sugar on top. Addictive lemon bars! Thanks.

I made this for my grandfather's 83 birthday. Everyone in my family loved them. My mom even wants these lemon bars for her birthday. I sprinkled powdered sugar on them. I didn't have a lemon juicer, but using a fork I extracted enough juice to give them great flavor. They're easy and taste excellent.

These really are the best lemon bars I've ever had. I'd recommend sprinkling some confectioner's sugar or powdered sugar on top for decoration.

These are "The Best" lemon bars. Easy to make and I think a kitchen aid mixer helps out a lot! Sweet taste, but not too sweet.
