Cauliflower Salad
4.5 of 5 Stars (2 reviews)
Servings: 6-10
Prep Time: 20 mins
Cook Time: 10 mins
Ingredients
10 strips Bacon
1 Bell Pepper - Green
1 Onions
1/4 Cup Sugar - White
8 Ounces (cubed) Cheese - Colby Monterey Jack
1 Cup (Miracle Whip) Mayonnaise
1 Head Cauliflower

Cooking Directions

1. Combined Miracle whip and sugar and set aside.

2. Cook bacon and set aside. (or when I'm in a hurry I cheat and use the Oscar Meyer crumbled bacon).

3. Remove leaves and stalk and cut or tear cauliflower into large bowl. Finely chop onion and green pepper and mix with cauliflower.

4. Pour Mayo / Sugar mix and stir. Crumble and add bacon. Stir. If you are chilling this overnight, wait and add the cheese before you serve. You can use shredded cheese, but if it sits in the salad too long it will "melt". I prefer cubes. Frozen peas are an optional ingredient. (Not on the ingredient list.)

We tried this tonight--a definite winner! A great way to get a lot of good crucifers down! My changes would be less mayo and sugar. I didn't use Miracle Whip, so I added a splash of Basalmic Vinegar to give some tartness. Thanks for posting this!
