Easy to follow cooking directions and moist turkey burger patties will guarantee this will be a family favorite for years to come.

Chicken and Mixed Vegetable Quesadillas

Ingredients
1/2 cup Red Pepper - Roasted (Jar), sliced
2 chicken breast Chicken - Breast
8 (6 or 8 inch) Tortillas - Flour
1/2 cup, sliced Mushrooms
2 cups Cheese - Monterey Jack
1/2 cup, chopped Onions - Red
1/2 cup, sliced Artichoke Hearts - Canned
Some Cooking Spray

Cooking Directions


1. Coat a large skillet or griddle with cooking spray.

2. Preheat skillet/griddle over medium heat.

3. Shred cooked chicken breast using fork and knife.

4. Arrange flour tortillas on a flat surface and top half of 1 side of tortilla with an equal amount of chicken, mushrooms, red peppers, and artichokes.

5. Top vegetables with about 1/4 cup cheese for each quesadilla.

6. Fold over tortilla making a half moon.

7. Place quesadilla on prepared pan and cook 3 minutes per each side, or until cheese melts and tortilla is golden brown. 2 quesadillas usually fit at one time on the pan, depending on the size of your tortillas.

8. Repeat steps 4-7 for each quesadilla.
