Chicken and Spanish Rice

1/4 teaspoon Seasoning - Black Pepper
3 1/2 cups chicken breasts Chicken - Breast, cooked, diced
3/4 cup Bell Pepper - Green, chopped
1 Tablespoon Parsley
1 1/2 teaspoon Garlic, minced
1 Onions, chopped
1 cup Tomato Sauce - Canned
2 TB. Vegetable Oil
5 cups cooked ( left over rice can be used) Rice - White


In a large skillet saute/'/ onions and green peppers in oil for 5 minutes on medium heat.

Add tomato sauce and spices. Heat throough.

Add cooked rice and chicken and heat through

I used cilantro instead of parsley. This dish would have a pretty good taste however it barely comes across. It seemed that the recipe called for far too much chicken and rice, to the point that the flavor from the other ingredients can hardly be appreciated. Or I may have measured erroneously.
