Cilantro Roasted Salmon

1 Limes, juice
to taste Seasoning - Salt
to taste Seasoning - Black Pepper
5 Tablespoons Olive Oil
1 Cup (coarsely chopped) Cilantro
1 clove Garlic
2 lbs Salmon - Fillet, skin on


1. Preheat oven to 400 F.

2. Place the garlic, cilantro, 2 tablespoons of the olive oil, the lime juice, salt, and pepper in a blender or a food processor. Process until creamy.

3. Brush a baking pan or sheet with the remaining oil and place the salmon in it.

4. Spread the cilantro mixture on the salmon and sprinkle with a little more salt and pepper.

5. Bake, uncovered until the salmon is done (peek in between the layers of flesh with a thin-bladed knife), 12 to 15 minutes. Serve immediately.

I tried this recipe the other day when all I had was salmon in the fridge, I pretty much always have cilantro and limes so this was the easiest recipe I could find and it sounded great. Well we were NOT disappointed in the least. I absolutely LOVED this blend, and the salmon tasted SO great... I find salmon if not marinated enough has too much of a "fishy" taste for my liking and this cilantro blend seasoned it PERFECTLY! I even tried the same blend on pork chops and it was delicious as well!


Perfect!!! We went for a healthier version and decided to grill instead of bake. Placing it on a plank enhanced the flavor. We also added some brown sugar and served it with grilled broccoli and grilled red rosemary garlic potatoes! Great meal!! Anyone doing weight watchers - half fillet is only 8 points!


This was so delicious! Next time will try with the skin side up so it gets crispy.
