Colleen's Oven Baked Eggplant

to taste Olive Oil
1 Eggplant
To Taste Cheese - Mozzarella
to taste Seasoning - Salt
to taste Seasoning - Black Pepper
To Taste Mushrooms


Pre-heat oven to 350F.

Take the large eggplant and slice horizontally into circlets.

Lay foil on a baking sheet and spray liberally with olive oil spray.

Place eggplant slices on foil.

Slice campari tomatoes (or any small tomato of choice) into circlets as well.

Place two to three slices of tomato on top of each eggplant slice.

Slice mushrooms vertically, place 1 - 2 mushrooms slices on top of tomato slices.

Spray the tops of each stack with more olive oil spray.

Place in oven at 350F and bake for about 15 minutes, or until cooked through to desired tenderness.

Top each slice with a pile of shredded cheese.

Set oven to broil.

Broil Slices for about 5 minutes, or until cheese is nicely browned.

Remove from oven and serve as a side dish with almost anything, or add cooked, shredded or cut up meat (like bacon bits or ground beef) on top before broiling and make it the main course!
