Servings: 6
Prep Time: 15
Cook Time: 35
Ingredients
2 Tablespoons Olive Oil
2 teaspoons Oregano
3 cups Chicken Broth
6 oz Spinach, coarsly chopped
4-6 oz Cheese - Parmesan, fresh grated - optional
3 cloves Garlic, minced
5 leaves Basil, chopped
1 teaspoon Rosemary, chopped
1 cup Rice - White, uncooked
1 14oz can Beans - Cannellini, drained and rinsed
8 oz Sausage - Chicken, sliced

Cooking Directions

1. Place oil in a 10- or 12-inch skillet over medium heat. Add sausage and cook until no longer pink, or until defrosted (pre-cooked). Add spinach, garlic and basil. Cook, stirring, until greens are wilted, 2 to 3 minutes; reserve.

2. Place the broth, oregano and rosemary in a medium-sized saucepan and bring to a boil; reserve.

3. Preheat oven to 350 F. Rinse beans and place them in the bottom of a 10- to 12-cup covered casserole. Spoon reserved sausage and greens over pasta. Scatter rice over greens. Pour in reserved broth. Cover and bake until pasta and grains are tender and most of the liquid is absorbed, about 30 - 40 minutes. Remove from oven, sprinkle with parmesan cheese and serve.
