It’s that time of year, BBQ Season! Try these delicious and easy to make turkey burgers on your grill. Most of the ingredients you already have, so you can make them tonight. Easy to follow cooking directions and moist turkey burger patties will guarantee this will be a family favorite for years to come.

Goat Cheese Penne

Ingredients
1/3 cup Olive Oil
1 medium Eggplant, cut in 1 inch cubes
3 Tablespoons Parsley, chopped
1 cup sun dried tomatoes
1 lbs penne pasta
3 oz goat cheese, crumbled

Cooking Directions


1. Preheat oven to 450.

2. Place eggplant cubes in colander lightly sprinkled with salt. Allow to stand 30 minutes.

3. Pour olive oil in baking dish, add eggplant & toss well to combine. Place in roasting pan & roast till browned, about 20 minutes.

4. In food processor, put sun dried tomatoes, parsley, 2 tablespoons of oil and pulse.

5. Cook penne pasta al dente.

6. Add eggplant, sun dried tomato paste & toss well. Sprinkle with goat cheese, and serve.
