I added green peppers, shredded boiled eggs, sliced black olives and about a 1/4 tsp of red pepper flakes to give it some bite. I've not thought about adding milk - makes the mayo much lighter

i don't know what makes this Hawaiian??????I myself added pineapple that would make this more Hawaiian. Are carrots from Hawaii???

@deathrowjoe - It's not that this Hawaiian Macaroni Salad is Hawaiian because it has a pineapple or coconut in it. This is just the way they make Macaroni Salad in Hawaii. Sometimes referred to as Hawaiian Mac Salad, it's delicious and easy.

I wouldn't add either pineapples or coconuts. To me it would destroy the taste of the Mac salad. But grated Maui Sweet Onions and or slice black olives are popular and common additions.

I think this sounds fine, and I will probably try it with peas and maybe some dried berries. Not everything Hawaiian has to have pineapple and coconut in it. I'm pretty sure that isn't all they eat there. LOL
