Japanese Shrimp and Bacon Fried Rice

Ingredients
1/4 Cup Olive Oil
4 Strips Bacon, Cut into 1/2" Pieces
10 Shrimp - Jumbo/Large
1 Cup Onions - Yellow, Diced
2 Eggs
2 Cloves Garlic, Minced
3 Stalks Onions - Green, Chopped
3 Tablespoons Soy Sauce
2 Cups (Short Grain, Japanese) Rice - White, Day Old Rice
1/2 Cup Peas - (Frozen)

Cooking Directions


1. Beat eggs, and cook. Set aside.
2. Cook bacon. Set aside.
3. Add olive oil and cook onions, green onions, and garlic. Add shrimp and cook through.
4. Add day old rice, eggs, and bacon to the onions, green onions, garlic and shrimp.
5. Add peas and soy sauce. Simmer for a couple minutes. Serve.
