Lasagna Roll-ups

1 tablespoon Olive Oil
1/4 cup Cheese - Mozzarella
1/2 pound Beef - Ground
1/4 cup Onions
1 jar Tomato Sauce - Canned
1 tablespoon Seasoning - Oregano
1/4 cup Cheese - Parmesan (Grated)
1 tablespoon Seasoning - Garlic Salt
1 tablespoon Seasoning - Basil
1 can Tomatoes - Canned (Diced)
1/2 cup Cottage Cheese
1 package Pasta - Lasagna


Preheat oven to 350 degrees. Cook lasagna noodles to al dente. Drain noodles and set aside.
Meanwhile in a large skillet, heat olive oil over medium heat. Add onion and saute for 2-3 minutes. Add ground beef and brown. When almost cooked through, add diced tomatoes and reduce heat to medium low. Simmer for about 15 minutes. Add 1/2 the basil, 1/2 oregano, and 1/2 garlic salt. Stir to combine.
In a small bowl, lightly beat egg. Add cottage cheese, Parmesan, 1/2 of the mozzarella cheese and remaining basil, oregano, and garlic salt. Stir together. Spray pan lightly with cooking spray. Add enough sauce to lightly cover the bottom of the pan. To assemble, on a drained noodle, add a spoonful of cottage cheese mixture. Top with a spoonful of meat sauce and roll up. Place seam side down in baking pan. Continue until you've used all the noodles. Pour remaining tomato sauce around each roll-up. Top each with a little more meat sauce and sprinkle with remaining mozzarella cheese. Bake but do not cover, place baking pan on top of baking sheet to catch any overflow. Bake approximately 20 minutes until cheese is melted and bubbly.
