Minestrone Soup

Servings 6-8 Prep Time 10 minutes Cook Time 20 minutes


1 can Tomatoes - Canned
3 Carrots, diced or sliced
1 can or 1 fresh Zucchini, chopped
1 tsp Seasoning - Salt
1/2 tsp Seasoning - Black Pepper
6 cups Water
1 Onions, chopped
1 tsp Seasoning - Oregano
2 stalks Celery, diced or sliced
6 Beef Bouillon Cube
1 pkg frozen Vegetables - Mixed
1/2 cup to 1 cup Pasta - Ditalini, or other soup pasta


1. Place carrots, celery, and onion in pot with water, bouillon, salt, pepper, and tomatoes. Boil til tender.

2. Add zucchini, oregano, and frozen mixed veggies.

3. Add desired amount of pasta and cook until tender.

If ditalini is unavailable, any other small soup pasta may be used.
