Penne with Tomato, Bacon, and Spinach

Ingredients

2 Tbsp Olive Oil
1 (14.5oz) Tomatoes - Canned
1 bunch Spinach, rinsed and torn into bite-sized pieces
6 slices Bacon
2 Tbsp Garlic, minced
12 oz Pasta - Penne, dry

Instructions

1. Bring a large pot of lightly salted water to a boil. Add the penne pasta, and cook until tender, 8 to 10 minutes.

2. Meanwhile, heat 1 tablespoon of olive oil in a skillet over medium heat. Place bacon in the skillet, and cook until browned and crisp. Add garlic, and cook for about 1 minute. Stir in the tomatoes, and cook until heated through.

3. Place the spinach into a colander, and drain the hot pasta over it so it is wilted. Transfer to a large serving bowl, and toss with the remaining olive oil, and the bacon and tomato mixture.

I guess I forgot to mention it, but chop the bacon first! I had this for dinner last night. Yum :)

I used turkey bacon and this recipe still had lots of flavor. I also used basil/garlic/oregano canned tomatoes for additional flavor. Add cracked black pepper while cooking and serve with freshly grated parmesan-reggiano cheese. Even my nearly 2 1/2 year old son gobbled this up. Yummy recipe! Thank you! I'm going to try this next time with arugula.
