Peppered Pork and Eggplant

Servings 4-6 Prep Time Cook Time 6-8 hrs low


4-6 Pork - Chops
1/2 tsp. dried Basil
1/2 tsp. dried Thyme
1 teaspoon Seasoning - Black Pepper
1 Onions, sliced
1 Bell Pepper - Green, sliced
1 medium Eggplant, cubed
2 (14 1/2-oz.) cans Tomatoes - Canned (Stewed)


1. Put pork into slow cooker and sprinkle basil, thyme and black pepper

over all.

2. Add onion, bell pepper, eggplant and stewed tomatoes.

3. Cook on Low for 6 to 8 hours. Serve.
