Perfect Pizza Crust

1 Tablespoon (active, dry) Yeast
1/4 cup Water, warm
2 1/2 Cups Flour - Unbleached
1 teaspoon Seasoning - Salt
to taste Olive Oil, drizzle


1. Combine the yeast and water in a small bowl and let stand until yeast is dissolved and foamy, about 5 to 6 minutes.

2. Meanwhile, in a large bowl, stir together flour and salt. Add the yeast mixture and stir with a wooden spoon until a dough forms (you may have to cautiously add more warm water, be sure to not add too much). Gather dough together with your hands into a ball and place on a lightly floured work space.

3. Knead dough until smooth, elastic and not sticky, about 10 minutes, adding flour if needed. Warm a large bowl with hot water, and then empty and dry well. Form the dough into a ball and place it into warmed bowl. Drizzle olive oil until completely coated. Cover the bowl with a clean dish towel and set in a warm place to rise, about 45-50 minutes.

4. To make pizza with this crust: preheat a pizza stone in the oven to 500 degrees. Once it reaches 500 degrees, reduce the oven temperature to 475 degrees.

5. Punch down the dough and knead a couple of times, then divide in half. Take one dough ball and flatten it on a floured work surface. Roll out into a ten inch circle. Sprinkle open ended cookie sheet with cornmeal, then place dough on cookie sheet. Add sauce and toppings.

6. Sprinkle corn meal onto pizza stone, then transfer pizza from cookie sheet to pizza stone. Bake for 10 to 12 minute, until edges are golden and crisp.

7. Repeat with other piece of dough.

NOTE: In this picture, one pizza had pesto sauce, caramelized onion, goat cheese and mushrooms. The other had tomato sauce and veggies.
