Roasted Chicken with Fruit and Pesto

Ingredients
5 - 6 Pound Chicken - Whole
1/2 cup Apricots - Dried
10 Leaves Basil, sliced in lengths
2/3 cup Pesto Sauce
1/4 Seasoning - Ginger, ground
1 cup Apricot Preserves

Cooking Directions


1. In a large bowl mix together preserves, dried apricots, ginger and basil. Stir in pesto sauce.

2. Remove neck and giblets from chicken and rinse thoroughly, inside and out.

3. Spoon a bit of the pesto mixture under the skin and spread over breast.

4. Place chicken breast side up in a shallow pan. Roast uncovered at 350 degrees for 1 hour and 45 minutes to 2 hours and thirty minutes or until drumsticks move easily and juices run clear. When done, transfer chicken to a serving platter and cover with foil. Let stand for 15 minutes before carving.

5. In a small saucepan, heat the rest of the preserve mixture over low heat until preserves melt and mixture is heated through. serve sauce over chicken.
