Roasted Potatoes with Golden Garlic Sauce

Ingredients
6 Tablespoons Olive Oil
to taste Seasoning - Black Pepper
1 Tablespoon Parsley, fresh, chopped
1/3 cup Garlic
1 Tablespoon Sugar - White
1/3 Cup (fresh chopped) Basil
2 Tablespoons Wine - White
1/4 Cup Vinegar - Balsamic
6 to 8 (wash, peel, cut into chunks) Potatoes

Cooking Directions


1. Preheat oven to 425 degrees. Put 3 tablespoons of the olive oil in the bottom of a 9 x 13-inch baking dish and heat in oven for 5 minutes. Add potatoes, tossing to coat them. Roast the potatoes, turning occasionally, for 30 to 35 minutes or until tender.

2. While the potatoes are baking, prepare garlic sauce: In a small skillet, heat remaining 3 Tablespoons olive oil, add cloves of garlic. Cover and cook over very low heat for 7 to 10 minutes, or until garlic is tender. Sprinkle with sugar and stir until garlic is caramelized. Add balsamic vinegar, white wine, basil and simmer 2 minutes. Spoon sauce over the roasted potatoes. Sprinkle with the fresh ground pepper and parsley and enjoy!

These were pretty good. My husband thought they would be better with less sugar.

I tried a bit of a variation with this recipe...
I cut the potatoes wide & flat & roasted them in olive oil, then slow cooked chicken in the sauce which was gorgeous although I'd probably halve the amount of balsamic used next time.
I recommend trying it that way with chicken.

They came out great!
I didn't have wine to use.
And instead of the fresh parsley and basil I used dried. I definitely recommend it!
