Saint Louis Casserole aka Party Potatoes

Cook Time: 45 Minutes
Ingredients
1/2 cup Onions, chopped
1 Pint Sour Cream
1 Stick and 1/4 Cup Margarine
1 Can Soup - Condensed Cream of Chicken
2 Cups (crushed) Corn Flakes
1 Cup (grated) Velveeta
2 Pounds Potatoes - Frozen Hash Browns

Cooking Directions


1. Preheat oven to 350 degrees.

2. Mix thawed potatoes in large bowl. Combine everything except cornflakes and 1/4 cup butter. Mix well. If you like salt and pepper add (to taste) and mix. Spread into a 13 by 9 inch pan.

3. Mix cornflakes with butter and put on top of casserole. Bake at 350 degrees for 45 minutes.

I love this recipe but I made a few modifications. I used cream of potato instead of cream of chicken and didn't put any butter on the cornflakes. I also bought a bag of shredded cheese instead of grating up velvetta. The recipe was a great launch and with my changes, my family loved it!
