It’s that time of year, BBQ Season! Try these delicious and easy to make turkey burgers on your grill. Most of the ingredients you already have, so you can make them tonight. Easy to follow cooking directions and moist turkey burger patties will guarantee this will be a family favorite for years to come.

Shrimp Stuffed Eggplant

Ingredients
1 Tablespoon Olive Oil
1 cup Bread Crumbs - Seasoned
2 Eggplant, cut in half lengthwise
1 lb Shrimp, cooked
2 cloves Garlic, minced
2 teaspoons scallions, chopped
1 lbs canned peeled tomatoes, coarsely chopped
2 ounces swiss cheese, grated
1/4 cup black olives, pitted and halved

Cooking Directions


1. Preheat oven to 350?F.

2. Scoop out eggplant meat leaving a 1/2 inch thick shell.

3. Set shells aside.

4. Chop eggplant flesh.

5. Heat oil in a heavy nonstick skillet over medium heat.

6. Stir in garlic and eggplant flesh.

7. Cover and cook 5-7 minutes or until eggplant is soft, stirring occasionally.

8. Stir in tomatoes, chives and olives.

9. Increase heat to medium high and simmer 5-7 minutes.

10. Remove from heat. Stir in shrimp , breadcrumbs and half the cheese.

11. Spoon filling into eggplant shells.

12. Sprinkle with remaining cheese.

13. Bake 35-40 minutes or until top is brown and bubbly.
