Shrimp and Artichoke Scampi

Cook Time: 6 Minutes
Ingredients
2 Tablespoons Olive Oil
to taste Seasoning - Salt
to taste Seasoning - Black Pepper
1 1/4 lbs Shrimp, peeled and deveined
2 Tablespoons Lemon Juice
1-2 Tablespoons Parsley, chopped
4 cloves Garlic, minced
1 (chopped) Shallot
1 (14 ounce) can, rinsed, drained, quartered Artichoke Hearts - Canned
1/3 cup Wine - White (dry)

Cooking Directions


1. Heat olive oil in large skillet over medium heat. Add garlic and shallots, cook for 2-3 minutes.

2. Add shrimp, artichoke, wine and lemon juice. Cook for 3-4 minutes, until shrimp is cooked through.

3. Add parsley and salt and pepper to taste.
