Shrimp with Spicy Tomato Sauce

Ingredients
2 Tablespoons Olive Oil
1 Tablespoon Butter
to taste Seasoning - Salt
2 lbs Shrimp - Medium, peeled and deveined
4 cloves Garlic, minced
(To Taste) Seasoning - Cayenne Pepper
8 (finely chopped) Tomatoes - Roma

Cooking Directions


1. In a large skillet over medium heat, cook the garlic in the olive oil until just golden, approximately 2 minutes. Be careful not to burn the garlic. Add the tomatoes and sprinkle with salt and cayenne pepper. Bring to a gentle simmer and cook, stirring occasionally, for 15 minutes.

2. Season the shrimp with salt and add to the tomatoes. Cook 3 to 5 minutes, or until no longer pink. Stir in 1 tablespoon of butter for added richness, if desired.

Great base for beginnings of a dinner. I kicked it up a bit by adding some fresh grape tomatoes,garlic powder,cajun seasoning, 1/4 block of cream cheese and finished it off with some fresh chopped basil. Yummy!!
