Simple Cream Sauce

1 cup Milk
.5 stick Butter
.25 cup Cheese - Mozzarella
4 cloves Garlic
.25 cup Cheese - Parmesan (Grated)
1 dash Seasoning - Italian
.25 cup Flour - Unbleached


Measurements need not be exact and proportions can be adjusted to produce a thicker or thinner sauce.

Melt butter in a sauce pan, and add flour. Stir vigorously to produce a roux.

Turn off heat (wait until the pan is just cool enough not to curlte the milk) and add the milk. Turn the heat back on and and stir until the roux is incorporated into the milk.

Add remaining ingredients and hear while stirring until cheeses are melted and sauce thickens. Add salt and pepper to taste.

Serve over chicken, vegetables, and/or pasta.
