Spicy Shrimp Avocado Salad

Ingredients
2 Tomatoes
to taste Seasoning - Salt
to taste Seasoning - Black Pepper
2 dozen Shrimp - Medium
2 Avocados
1 Limes
1/4 Cup Vegetable Oil
1 Cucumber
1 Teaspoon (more or less to your liking) Seasoning - Chili Powder
Handful of loose leaves Cilantro

Cooking Directions


1. Peel and de-vein shrimp. Poach shrimp at a simmer in 3 quart skillet with water and remove to cool. Place in bowl on ice to stop cooking and to chill. Remove after 2 minutes and pat dry.

2. Tear or lightly chop cilantro leaves.

3. Mix oil and chili flakes together and allow time for oil to absorb chili flavor. Set aside.

4. Cut tomatoes and avocado in 1 inch cubes. Peel skin of cucumber,slice length-wise, gut seeds and cut 1/4 inch thick or to liking.

5. Mix together all ingredients and add lime juice, salt and pepper to your taste. (It helps to add avocados last and just fold them lightly in with rest of salad) Serve plain or in iceberg lettuce cup.
