Sweet Potato Pancakes

4 Tablespoons Butter, melted
1 teaspoon Seasoning - Cinnamon
2 Eggs
2 Cups Milk
1 Cup Flour - All Purpose
4 Teaspoons Baking Powder
2 Tablespoons Sugar - Brown
Pinch Seasoning - Nutmeg
1 (cooked, pureed) Sweet Potatoes
1 Cup Flour - Wheat


1. To cook the sweet potato, wash the potato, pierce it with a fork, place in pan and cook for about 45 minutes in oven heated to 375 degrees.

2. In a large bowl, combine all ingredients. Mix together and whisk until smooth.

3. Cook batches in buttered skillet on medium high temperature until bubbles form on the surface, then turn over and cook until dark golden brown.

4. Serve with butter and maple syrup.
