Taco-Pasta Salad

Servings 2 Prep Time 20 Minutes Cook Time


4 Ounces (Uncooked) Pasta - Rotini, Prepare According to Directions
1/2 Pound Beef - Ground, Lean
2 Tbs Seasoning - Taco, w/ 1/4 Cup Water
1 Bell Pepper - Green, Diced
2 Tbs Salsa
2 Tbs Sour Cream, Fat Free
2 Tbs Cheese - Cheddar, Reduced Fat (Shredded)


1. Cook pasta, drain.
2. While Pasta cooks brown ground beef over medium heat until no pink. Drain the beef, return to skillet.
3. Add taco seasoning, water and bell pepper, stir & simmer until thick.
4. While simmer combine salsa and sour cream.
5. Place a portion of pasta on two plates, Top with ground beef mixture. Sprinkle with half the cheese, and dollop of salsa cream.
