Tex Mex Rice
5 of 5 Stars (2 reviews)
Servings: 4
Prep Time: 25 min.
Cook Time: 5 min.
Ingredients
1 Tablespoon Butter
2 slices Cheese - American
1/4 cup Milk
1 tbsp. Seasoning - Taco
1 tbsp. Barbecue Sauce
1/2 - 1 can Tomatoes - Canned (Diced)
1 can Beans - Black (Canned)
1 cup Rice - White

Cooking Directions

1. Cook rice according to package directions. Generally- 1 cup of rice to 3 cups water, cook on high (in microwave) 5 minutes, then on medium for 20 min.

2. When there is approximately 10 minutes left on rice, in medium saucepan combine black beans (drained and rinsed), tomatoes (include liquid), milk, butter, barbecue sauce, taco seasoning, and cheese. (I generally use macaroni and cheese powder mix packets, not american cheese, so you can play with it how you like).

3. Cook over medium heat until heated through, approximately 5 min. Do not cook too long, however, as you will lose too much liquid and the rice will be too dry.

4. Add rice to saucepan while still over heat and stir until coated. Now it's ready to serve! Add some hot sauce or red pepper flakes if you like a little heat.

5. Great served with cornbread!
