Turkey Sausage Pasta Primavera

Ingredients
1/2 cup Olive Oil, divided
2 Zucchini, chopped
1 Bell Pepper - Green, chopped
1/2 teaspoon Seasoning - Red Pepper Flakes
4 cloves Garlic, diced
1/2 Onions, diced
1/2 Cup Cheese - Parmesan (Grated)
20 Leaves Basil
6 (Chopped) Tomatoes - Roma/Plum
2 Teaspoons Chicken Bouillon Granules
1 (16 oz) Package Pasta - Farfalle (Bow Tie)
2 (chopped) Squash - Yellow
1 lbs (Cut into 1/2") Sausage (Turkey)

Cooking Directions


1. Bring a large pot of lightly salted water to a boil. Place farfalle in pot and cook 8 to 10 minutes, until al dente; drain.

2. Place sausage in a large skillet over medium heat and cook until evenly brown; set aside. Heat 1/4 cup oil in skillet. Stir in garlic and onion, and cook until tender. Mix in zucchini, squash, tomatoes, bell pepper and basil. Dissolve bouillon in the mixture. Season with red pepper. Stir in remaining oil. Continue cooking 10 minutes.

3. Mix pasta, sausage and cheese into skillet. Continue cooking 5 minutes, or until heated through.

This recipe is so yummy! I cut the oil down to 2 tbsp of olive oil though to make it healthier. The 1/2 tsp of red pepper flakes gave it the exact amount of kick it needed. I definitely recommend this!Also, FYI for Weight Watchers Points Plus plan this makes 8 servings at 10 points per serving.
