Twice Baked Sweet Potatoes

Ingredients

4 Tablespoons Butter
to taste Seasoning - Salt
to taste Seasoning - Black Pepper
1/2 teaspoon Seasoning - Cinnamon
4 Tablespoons Sugar - Brown
1/4 Teaspoon Seasoning - Nutmeg
6 Sweet Potatoes
1/4 Teaspoon (ground) Seasoning - Ginger

Instructions

1. Preheat oven to 375 degrees F. Wash sweet potatoes thoroughly

2. Place sweet potatoes on sheet tray and bake for 1 hour or until soft. Remove from oven and let stand until cool enough to handle.

3. Split potatoes and remove the flesh to a medium sized bowl, reserving skins. 4. In another bowl, add brown sugar, butter and the all of the spices and mash with a fork or rubber spatula. Optional: add 4 ounces of softened cream cheese to this mixture to make it more rich.

5. Add the butter mixture to the sweet potato flesh and fold in completely. Add the filling back to the potato skins and place on a half sheet tray. Bake for 15 minutes or until golden brown.

Where did you find sweet potatoes? Hard to find in my area. Plenty of yams, but no sweet potatoes.
