It’s that time of year, BBQ Season! Try these delicious and easy to make turkey burgers on your grill. Most of the ingredients you already have, so you can make them tonight. Easy to follow cooking directions and moist turkey burger patties will guarantee this will be a family favorite for years to come.

Vegetable Fajitas

Ingredients
1/2 teaspoon Seasoning - Salt
1 Bell Pepper - Red, sliced
1 Bell Pepper - Green, sliced
1 teaspoon Garlic, minced
1 Onions, thinly sliced
1/2 Cup Salsa
8 Tortillas - Flour
2 Tablespoons Vegetable Oil
1 Teaspoon Seasoning - Cumin
1/4 Cup (chopped) Cilantro
1 Cup (shredded) Cheese - Monterey Jack
1 (cut into half moons) Squash - Yellow

Cooking Directions


1. Wash vegetables thoroughly and chop vegetables.

2. In a 10 inch skillet, heat oil over medium high heat. Add onions, red and green peppers, and garlic; stir to coat with oil. Cover, reduce heat to medium, and cook for 5 minutes. Stir squash into vegetables. Stir in salsa, cumin, and salt. Cover, and cook for 5 minutes.

3. Spoon vegetable mixture evenly down the centers of warm tortillas, and sprinkle with cheese and cilantro. Roll up tortillas, and serve.

NOTE: Other vegetables that you can add or substitute include carrots, mushrooms, corn or celery. Also, make it a complete meal by serving fajitas with black beans and/or Spanish rice!
